Malting & Brewing by Mike Edney
Mike Edney is a retired malting barley scientist who worked in the federal government’s Grain Research Laboratory in Winnipeg for 25 years. During his career Mike researched the measurement of barley and malt quality and how it affects beer processing and beer quality resulting in over 80 peer-reviewed publications. He has a PhD in malting and brewing science from the Technical University of Munich and was a certified beer taster in both Munich and Winnipeg. Mike now lives in Owen Sound where he spends his time making beer in his backyard; playing, teaching and directing duplicate bridge as well as tripping with the cedar strip canoe he built early in his retirement. He also provides scientific reviews for the Canadian Barley Research Coalition and he sits on the board of directors for the Bruce Trail Conservancy.
Mike will present a talk to the True Grist Homebrew Club entitled, Biochemistry of Malting and Its Importance for Home Brewers. The talk will discuss why malting is necessary, the malting process, the breakdown of cell walls and protein, the development of starch-degrading enzymes, some effects of kilning and then some insight on how this biochemistry could be of interest to home brewers.
